Orange Mandarin Salad

The color and sweetness of orange and the richness of caramelized almonds make this a special side salad for any occasion.

1/4 cup slivered almonds and 2 Tablespoons sugar

Caramelize almonds with sugar in a small frying pan over medium heat until toasty, stirring constantly so not to burn. Place on oil-sprayed tin foil to cool.

1 package of romaine hearts
1 cup chopped celery
2 green onions, sliced on diagonal
1 (11-oz) can mandarin oranges, drained
Toss together

1/4 cup light salad oil
2 Tablespoon rice wine vinegar
2 Tablespoon sugar or 1 Tablespoon agave syrup
1/2 teaspoon salt
six dashes of Tabasco sauce (use less if you don't like a zip)
few grinds of black pepper

Shake together in jar and then mix with salad and caramelized almonds.
